Food proteins are the essential macronutrient that must be obtained from foods. In addition to providing required amino acids and energy, food proteins are the recognized precursors of bioactive peptides. These peptides can only show their biological effects once they are released from their parent proteins. Bioactive peptides derived from food proteins hold great promise for the prevention and management of many chronic diseases as functional foods and/or nutraceutical ingredients.
